Merry Christmas!

My contribution to Christmas Eve dinner this evening is the cheese platter. I decided to go with a goat cheese, provolone and fresh ricotta. To add a bit of holiday color, I rolled the goat cheese in dried cranberries and chopped pistachios. The ricotta I placed on french baguette slices with prosciutto, honey and thyme. The provolone I kept simple, ready to be sliced with crackers. Wishing everyone a very Merry Christmas! x

Superbowl Sunday

It’s that time of year for all the wings, chips and salsas to come out for the Superbowl parties. While contemplating what to cook up for this evening’s festivities, I was inspired by Eat Yourself Skinny’s BBQ chicken bites. Changing up the recipe a bit for a lighter flavor, I made a couple different versions: Whole Foods pulled chicken with tangerine dressing, Mammuth goat cheese from the farmers market and fresh cilantro into mini phyllo dough shells, and a vegetarian-friendly option that included teriyaki baked tofu. As an additional quick and easy dish, Whole Foods Alaskan Salmon bites are perfect. Go Giants!

Back in a New York state of mind, I recently had some girlfriends over for poolside entertaining at my parent’s house. While my dad took care of the sliders with mac & cheese, I had fun throwing together some dips and bruschetta from Wegman’s, a regional favorite supermarket here in the Northeast. I spread asiago cheese & artichoke dip on the pita and topped with tomatoes and fresh cucumber. And then just plain bruschetta on bread slices, followed by a taste of good old fashioned grape licorice.

Hoboken hosted their annual St. Patrick’s Day parade this weekend, and to celebrate, my friend made a feast of green snacks at her apartment. Simple, yet fun, it included green chocolate covered strawberries, green creme cheese and bagels and adorable green cupcakes. And you can’t forget to include a green veggie tray and “pot of gold” jello.
